FERMENTATION OF COCOA BEANS

Fermentation of Cocoa affects the flavour of beans. Proper fermentation of Cocoa is one of the characteristics of Ghana cocoa beans. As a result, Ghana is recognized in the world as the producer of premium quality cocoa beans.

The fermentation process is demonstrated in the videos above. These are smallholder farmers who are diligent in good agricultural practices (GAP). The Farmer Field School (FFS) and Video Viewing Clubs (VVC), as adult teaching methodologies, were used to build the knowledge capacity of smallholders in GAP in Ghana.
